Ingredients
  • 3 eggs
  • 1 cup oil
  • 3 tsp. vanilla
  • 2 cup sugar
  • 3 cups zucchini
  • 3 cups plain flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 cup chopped nuts
  • 3 tsp. cinnamon

Instructions
  1. Beat eggs, adding oil, sugar, zucchini, and vanilla. Mix lightly but well.
  2. Sift flour with other dry ingredients, and then add to wet mixture.
  3. Add nuts. Mix well.
  4. Bake in 2 greased and floured pans for 1 hour at 350 deg. or until done

Can be frozen.

Ingredients
  • 1 stick Oleo or margarine butter could also be used
  • 2 cups sugar
  • 3 ronded tbsp. flour
  • 3 eggs
  • 1 cup buttermilk
  • 1 tsp. vanilla
  • 1 pie shell uncooked

Instructions
  1. Cream butter and sugar. Pour into deep, unbaked pie shell at 350 deg. for 45 min.
  2. Add flour and beaten eggs, buttermilk, and vanilla. Mix well.
  3. Pour into deep, unbaked pie shell at 350 deg. for 45 min.
